A Regimen for Remission
This log tracks my regimen of attitude, exercise, stress management, and SCD foods. Since I started this regimen in 1997, I've been able to keep my Crohn's in a drug-free remission.

Even though I may have experimented beyond the SCD from time to time, one must remember that everyone is different. Follow the intro diet for 3-5 days, and stick with the SCD until you are completely symptom free for at least one year before experimenting.

Dinner: Pot luck @ Mitch & Susan's. A wonderful meal including Laura's chicken cacciatore, Kristen's Thai curry dish, baked eggplant with tomatoes and mozzarella, and beef burritos. I got a party favor of sorts--some sort of staghorn cholla cutting, which is about to flower. Can't wait to plant it!

Dinner: Laura made dinner tonight because Mike was busy with house projects (boy stuff). Main course was Moroccan baked fish (red trout from Wild Oats Market) with lemon, garlic, parsley and olives. YUM. Appetizer was steamed baby artichokes dipped in butter... veggie was yellow squash with butter, salt and pepper. Chilled Merlot washed it all down nicely.

Yes, and I love it. It's 9:20PM here (KTUS doesn't update too frequently, as you can see) and this is what wmWeather tells me:

Dinner: grilled turkey burgers with roasted peppers, onion, and garlic. Fresh tossed salad.
Snack before the gym: queso manchego on sesame and rice crackers (both from TJ's). Curious about that cheese? It is delicious! I first experienced it in 1982 on my first trip to Spain. It is a semi-hard cheese made from sheep milk.

Dinner: fresh, organic asparagus cooked slowly over low heat with garlic and a dash of salt (a Spanish recipe), leftover Thai chicken, and a tossed salad (with spinach, too!).

Lunch: leftover grilled chicken and turkey sausages with Miss Lula's bichin' mustard, and a tossed salad. I snacked on a chocolate chip cookie earlier. Darn tasty, too. Will the GIGO payback hit? Hope not..!

As is the tradition around here, we did not follow the traditional "rules" for holiday fare. This "East-over", we enjoyed our feast outdoors on our back patio while we watched the sun set on the Santa Catalina mountains.

Appetizers:
queso manchego and fino seco

Entrees:
grilled chicken, marinated in a Thai peanut sauce
grilled chicken, Tandoori style
steamed yellow squash
cucumber raita, from A Simple Celebration. The basic recipe:
Mix all of the following, and chill: 2 cucumbers, peeled, seeded, and cubed; 1/2C yogurt; 1T minced scallions; 1/2t ground ginger; 2T chopped cilantro; juice of one lemon; dash of honey; dash of turmeric, cinnamon, and cardamon.

Dessert:
fresh pineapple slices

We made a lot of extra food, which we'll be feasting on for days to come!

Breakfast: fruit, leftover chicken, and some more of those roasted veggies.

Dinner yesterday: grilled fillet of salmon with a walnut-cilantro pesto, leftover roasted carrots, onions, and celery, and a juicy tossed salad. You can make the pesto yourself (cilantro, walnuts, vinegar, and garlic) or you can get it at TJ's.

Lunch yesterday: @ Keaton's..a so-so steak fajita salad.

Dinner: A totally awesome Thai trout dish!! We made Pla Pao Ubon, or grilled whole fish with lemongrass and basil. We grow basil and lemongrass in our herb garden, so this recipe wasn't too difficult. Basically, it was a whole trout stuffed with basil and lemongrass, a little fish sauce, soy, and garlic. Then wrapped in a banana leaf (keep 'em in the freezer for occasions like this), then wrapped in foil. Grill that puppy for 8 minutes per side, and you've got a taste of Thailand! The recipe we used came from Nancie McDermott's Real Thai - we've used recipes from this book on many occasions. Check it out! Alongside our Thai trout we feasted on grilled zucchini with spicy bean sauce, and a stir fry of French sting beans and garlic. Ah yes, and a small glass of fino seco.

Lunch: leftover grilled ribeye, veggie stir fry, and some salad. Oh yeah, and cauliflower "mashed potatoes"! I love three day weekends!

Dinner (last night): we bought a roasted chicken, pulled it apart, and devoured it while watching TNT's Don Quixote on tape. Along with the chicken: a stir fry of broccoli, scallions, and garlic in a Penang sauce, and a tossed salad.

Dinner: grilled turkey and chicken sausages (Gerhard's, from TJ's), cauliflower "mashed potatoes", and a nice tossed salad.

Lunch: a BACTLT from Daggwood's Cafe. I peeled most of the bread off of it, I swear! :-) It was delicious--bacon, avocado, cheddar, turkey, lettuce, and tomato on rye. My mouth still waters just to think of it! (No effect, yet...)

Breakfast: an apple, and some scrambled eggs.

Another awesome dinner @ Mike & Laura's :-) Appetizers: brilled Italian brown mushrooms, stuffed with shallots and garlic. Followed by a tossed salad (with organic raisins!) and a balsamic vinaigrette, leftover curried Swiss chard, and grilled salmon fillets with garlic and black bean sauce. We get our fish at Wild Oats, but who knows how much longer one will be able to get the variety of fish one would like? I bring this up because there are many species of fish that are so overfished that voluntary (and mandatory) reduced "takes" have been imposed. Wild Oats is conscious about this and has removed at least four types of fish from their stores. But is that enough? Others are still being over-caught, sold, and consumed. Check out what the EDF has to say.

Much of the problem stems from our growing population's demands on the earth's natural resources. However, the ways fish are caught can also play a large role in the problem. For example shrimp trawlers in the Gulf of Mexico catch red snapper and other types of fish, but throw them away (long since drowned), as well as many types of sea turtles and other marine creatures. Lunch today: grilled ribeye steak with a tossed salad. Out on my back porch, wondering how the sky can stay so blue out here in AZ.

Breakfast today: fresh fruit and scrambled eggs. Jarlsberg cheese.

Dinner yesterday: grilled whole trout, stuffed with pimientos, mushrooms, black pepper, and butter.

Here's the recipe for Laura's Leafy Greens with Curry:

1 large bunch of greens (chard, kale, mustard greens, or collard greens) washed, trimmed, and chopped
2 tablespoons olive oil, ghee, melted butter or other veg oil
2 medium onions, chopped
4-6 cloves garlic, minced
1/2 teaspoon ground cumin
1 tablespoon curry powder
1/2 teaspoon ground ginger (or 1/2" cube fresh, minced)
1/2 teaspoon ground coriander
1/4 teaspoon ground red pepper
1/4 cup vegetable or chicken stock or water
1-2 finely chopped ripe tomatoes

Braise the greens (2-3 cups water to 1 lb greens; bring to a boil and simmer till tender not mushy, approx 7-10 minutes. Young greens will cook very quickly.).

In a large skillet, heat the onions, garlic, ginger, oil and cumin; cook until onions are softened, about 5 minutes. Stir in the greens and cook until wilted, about 5 minutes. Stir in the spices and stock and simmer another few minutes. Add the puree and simmer 6-9 minutes, stirring often. Serve warm. Can be served over grated zucchini as a main dish, or as a side to meat, fish, chicken, etc.
Serves four. Mike's note: really high in calcium!

Awesome dinner! leftover roasted chicken and artichokes, and Laura's phenomenal curried greens. I'll post her recipe here later. After dinner we put all our furniture back on our newly-tiled floor and unpacked a wonderful coffee table that was made by hand by Laura's grandfather. You must see it to believe it!

Dinner: I especially love grilling my food. Tonight is no exception. I grilled up some Gerhard's Napa Valley smoked chicken and turkey w/garlic and herb sausages. Juicy, hot sausages, and a fresh tossed salad with oil and vinegar dressing. You can get the sausages at TJ's.

What is so special about grilling? Grilling often adds flavor to fish, chicken, beef, or vegetables, and it seals in a lot of the natural juices. Also, I spend most of my day inside, so grilling on my back patio is a great way to wind down, watch the awesome Tucson sunsets, and relax. My wife and I often eat outside, which is really great, too. Grilling is that "pause that refreshes" for me; just enough to re-energize me to come back in and update this Flog.

Lunch: Today (like most days), people are wandering around the office asking, "what smells so good? who made that?" Oh, just me :-) I love anything with curry, coconut, or garlic. Today it's curry: Chicken Masala (Indian style, not Italian) from Trader Joe's (TJ's). This stuff is so good. I'm so hungry..I should have brought two of them with me this morning. People should know by now: if it smells good, it's probably Mike's lunch!

TJ's offers lots of food options for those on the SCD. You have to be a little creative, though. Anyway, check them out--they have lots of cheeses, nuts, organic vegetables, wine, organic eggs, and more. They even have a brochure about their gluten-free items (almost SCD-legal).
